Gunter is a food scientist who is interested in the effect of phenolic compounds on health. He has been investigating the metabolism and health effect of phenolic compounds for more than two decades. This research has highlighted the difficulties in estimating intake in dietary studies - the methods commonly used have many limitations and are not suitable for many compounds. He is therefore particular interested in the development of new and objective methods to measure or estimate intake of bioactive compounds and investigate associations with help. As part of this research, he has conducted one of the largest biomarker-based studies to investigate the association between flavanol intake and health.
At the University of Reading, I am Director of Teaching and Learning at the Department of Food & Nutritional Sciences and teach Nutritional Epidemiology.
