Olive McCarthy is a professor in the Department of Food Business & Development and a senior researcher with the Centre for Co-operative Studies at Cork University Business School (CUBS), University College Cork. Her research and teaching interests span co-operatives of all types, with a particular interest in agri-food, credit unions, and related issues, on which she has published widely. She was appointed in 2018 by the Irish Minister for Finance to the statutory Credit Union Advisory Committee (CUAC) which advises him on credit union policy and legislation.
