I am a food scientist and researcher passionate about sustainable food innovation and the circular bio-economy. My MSc research focused on expanding the use of coconut kernels in Kenya, which resulted in published work and the development of a dairy-free, coconut-based ice cream. I am currently a part-time lecturer at Jomo Kenyatta University of Agriculture and Technology while pursuing a Ph.D. in Food Science and Technology as part of the Danida-funded GeckoCir project. My research centers on upcycling food side streams and creating circular business models to enhance sustainability in the Kenyan food industry.
